Signature Flavors of Mexico City Come to Phoenix: Escobar Mexican Kitchen
By: Jessica Danielle Ramirez
There is no doubt that in Arizona there are an endless number of Mexican restaurants in the Valley to choose from; all having unique flavors and their own version of “true” Mexican food. If you are a die-hard fan of Mexican cuisine, you’re probably like many others who are always on the hunt for food that is just like your abuelita’s.
Look no further than Escobar Mexican Kitchen. It is one of the latest Latino eateries to set up shop in Phoenix. Guadalupe Escobar, a native from Mexico City, brings the famous flavors and signature dishes to the table.
“Mexican food is not just beans, tortillas, and salsa,” said owner and chef Guadalupe Escobar.
Natural, simple, and homemade is the technique and style served at the new spot. While foodies will find the familiar dishes such as quesadillas and street tacos on the menu, there are also some common items that are made with an “Escobar twist”.
“We make our tamales different,” she said. “I don’t make beef tamales because we don’t eat them where I am from [Mexico City].”
Although you won’t find beef tamales on the menu, there are other flavors ranging from sweet, to chicken and beef. In fact, chocolate and pineapple flavors are available upon order; and of course, a holiday favorite: tamale de Calabaza.
And as any new restaurant goes, there is always that one special item that is so intriguing you simply must try. For Escobar Mexican Kitchen, it’s their chiles en nogada.
“You cannot find this item on the menu because we only serve it twice a year,” explained Escobar.
While some may be lucky to get a taste of her occasional special dish, there is one item that is always on the menu: the pambazo. It’s similar to a sandwich and handmade to the core. From the bread that is baked in house, to the fresh cut potatoes and homemade chorizo. It’s all fresh and will get you hungry, not just for another plate, but for a trip to Mexico.
It’s not every day you come across a Latina who transitioned from a nurse to restauranteur in hopes of fulfilling her lifelong passion. While Escobar left her career to start a new journey, her spirit for culinary is transferred from the kitchen all the way to the table.
